An air fryer is a small convection oven, so bacon cooks at 180 °C rather than 200 °C and takes 7–11 min instead of 15–20. That is roughly the usual 20 °C drop and a fifth off the time.

## What goes wrong

- Lower the temperature rather than raising it. Rendering fat at 200 °C in a small basket produces enough smoke to set off an alarm.
- Put a slice of bread or a tablespoon of water under the basket to catch dripping fat and stop it smoking.
- Streaky crisps in 7-8 minutes; back bacon needs closer to 11.
