That is the whole difference, and it is why the same food cooks cooler and faster. The rule of thumb works for most things and fails predictably for a few — thin items barely change, thick joints change a lot, and anything close to the element burns on top before the middle is done. ## Safe internal temperatures *USDA FSIS minimums. Drop the temperature by about 20 °C (25–30 °F) and cut the time by roughly a fifth. Check early the first time — wattage varies widely between models. ### Do you need to preheat an air fryer? For most foods, no — the cavity is small enough to come up to temperature in a couple of minutes with the food already in. It helps for anything you want to sear or crisp, such as wings, chips or steak. ### Why is my air fryer food not crispy? Almost always overcrowding. A full basket traps moisture and the food steams instead of browning. Fill it no more than half full and cook in batches. ### Can you put foil or parchment in an air fryer? Yes, but it must be weighted down by food. Loose paper or foil gets pulled into the heating element by the fan, which is a fire risk.
