# Can you freeze coffee?

Coffee stales through oxidation and by losing volatile aromatics, and cold slows both, so long-term freezing of beans works. The failure is the freezer door habit: every time a bag comes out, moisture condenses on the cold beans, and that moisture strips flavour and later causes clumping in the grinder. Freezing in single-use portions that go from freezer to grinder without warming up avoids the problem entirely. Ground coffee freezes less usefully because it has already lost most of what freezing would have protected.

## How to do it properly

1. Divide beans into single-use airtight portions before the first freeze
2. Squeeze the air out and seal well — oxygen is the enemy, not cold
3. Grind straight from frozen; do not let the portion sit out and sweat
4. Never return a thawed portion to the freezer
