# Can you freeze cooked rice?

**Yes: Yes, and freezing quickly is the safest way to keep leftover rice.**

Cooked rice can carry Bacillus cereus spores that survive cooking and produce a toxin if the rice sits in the danger zone, so getting it cold fast is the whole game. Spreading it thin to cool and freezing within an hour of cooking beats leaving it in the fridge. USDA lists cooked rice among foods whose texture suffers in the freezer, and it does come out drier, but reheating with a splash of water under a cover largely fixes that. Reheat once, to 74 °C (165 °F), and do not refreeze it.

## How to do it properly

1. Spread the rice out on a tray to cool it fast, within an hour of cooking
2. Portion into flat bags or containers so it freezes and reheats quickly
3. Reheat from frozen with a tablespoon of water per portion, covered
4. Heat until steaming through, at least 74 °C (165 °F)
5. Serve immediately and do not reheat a second time
