# Does Canned food expire?

**Does Canned food expire?: An intact, undamaged can is safe more or less indefinitely. Quality is the limit, not safety.**

High-acid (tomatoes, fruit): 12-18 months for quality. Low-acid (vegetables, meat): 2-5 years

Canning sterilises the contents and seals them, so provided the seal holds nothing can get in. Cans recovered from a steamboat that sank in 1865 were analysed a century later and found still free of microbial growth, though nobody suggested eating them. High-acid contents corrode the can from the inside over years, which affects taste and eventually integrity. The only genuinely dangerous can is a damaged one: bulging, leaking, badly rusted, or with a deep dent on a seam, all of which can indicate a broken seal and, in low-acid foods, the possibility of botulism.

## How to store it

- Cool and dry. Heat is what shortens canned shelf life.
- Never store opened cans in the can — transfer to a container.

## How to tell it has gone

- Bulging, spurting on opening, leaking or deep seam dents: discard without tasting.
- Surface rust is fine; rust that pits through is not.
