Milk and white: about 1 year Chocolate is fat and sugar with very little water, so it does not support microbial growth and it does not spoil in the ordinary sense. Dark chocolate keeps longest; milk and white contain milk solids whose fat eventually goes rancid, which is the actual limit on their life. The greyish film that develops on old or badly stored bars is bloom — cocoa butter that has migrated to the surface and recrystallised, or sugar drawn out by condensation — and it is harmless, if unattractive, and disappears when the chocolate is melted. Chocolate also absorbs smells aggressively, so a bar stored next to onions tastes of onions. ## How to store it - Cool, dry, around 15-18 °C, tightly wrapped. - Not in the fridge unless the room is very hot — condensation causes sugar bloom. - Away from anything strongly scented. ## How to tell it has gone - Grey or white streaks are bloom and are fine. - A rancid, crayon-like smell in milk chocolate means the dairy fat has turned. > "Use by" and "best before" are legally different. Use-by is a safety date and should be respected; best-before is about quality, and food is usually fine well past it.
