# Does Cooking oil (sunflower, rapeseed, vegetable) expire?

Refined vegetable oils oxidise on contact with air, and heat and light accelerate it enormously, which is why a bottle beside the hob turns long before an identical one in a cupboard. Rancid oil smells of putty or old crayons and tastes bitter; it is not acutely dangerous but the oxidation products are not something to eat by choice, and it ruins whatever it is cooked in. Oil that has already been used for frying degrades much faster, because food particles and water accelerate breakdown. Repeatedly reheated frying oil darkens, smokes at a lower temperature and should be replaced rather than topped up indefinitely.

## How to store it

- Cool, dark cupboard, not next to the hob.
- Cap tightly; headspace air is what does the damage.
- Strain and refrigerate used frying oil if you intend to reuse it.

## How to tell it has gone

- A putty, crayon or paint smell means rancid.
- Frying oil that smokes early, foams or has darkened badly is done.
