What changes is the cell wall chemistry: as they age and dry further, pectin cross-links and the beans resist rehydration, so cooking time stretches from an hour to several, and beans more than a few years old can stay stubbornly gritty however long they are simmered. Soaking longer and cooking with a pinch of bicarbonate of soda helps, and a pressure cooker helps more. Red kidney beans carry a separate rule that has nothing to do with age: raw or undercooked they contain enough phytohaemagglutinin to cause violent vomiting, so they must be boiled hard for at least ten minutes. ## How to store it - Airtight, cool, dark and dry. ## How to tell it has gone - Beans that will not soften after hours of simmering are old, not dangerous. > "Use by" and "best before" are legally different. Use-by is a safety date and should be respected; best-before is about quality, and food is usually fine well past it.
