Bacteria do not grow below −18 °C, so nothing frozen solid and kept that way becomes unsafe — a joint of meat found at the back of a freezer after three years is safe to eat and will taste poor. What degrades is texture and flavour, through ice crystal damage and through fat oxidising, which is why fatty foods like bacon and oily fish decline much faster than lean ones. Freezer burn is dehydration at the surface, not spoilage; cut it off. The one real risk is a freezer that has partly thawed and refrozen without anyone noticing.

## How to store it

- −18 °C or colder, and check it with a thermometer rather than trusting the dial.
- Wrap tightly. Freezer burn is caused by air contact.

## How to tell it has gone

- Freezer burn — grey-brown dry patches — affects taste, not safety.
- A block of ice at the bottom of a bag means it thawed and refroze at some point.
