Freeze-dried coffee has almost no water in it, and a sealed jar is essentially inert, which is why it turns up in emergency ration packs. Once opened, it takes up humidity from the air, and damp granules clump, dissolve poorly and lose aroma quickly. It never becomes unsafe. Keeping the jar closed and away from steam is the whole of the storage advice.

## How to store it

- Airtight jar, away from the kettle.
- Use a dry spoon.

## How to tell it has gone

- Hard clumps mean moisture. A weak, papery smell means the aroma has gone.
