The result is the bitter, paint-like taste of a stale walnut, which is unpleasant rather than dangerous. Shelled nuts go first because the shell was doing the protecting; walnuts and pecans go fastest because their oil is the least stable. The freezer roughly triples the useful life and does not harm the texture. ## How to store it - Airtight in the fridge or freezer if you keep them more than a couple of months. - Buy in shell for long storage. ## How to tell it has gone - Bitter, paint-like or fishy taste means rancid. - Visible mould, especially on peanuts, means discard — that is a different problem from rancidity. > "Use by" and "best before" are legally different. Use-by is a safety date and should be respected; best-before is about quality, and food is usually fine well past it.
