# Does Nuts expire?

**Does Nuts expire?: They go rancid rather than mouldy, usually within a year, and rancid is a taste problem rather than a poisoning one.**

6-12 months at room temperature; 1-2 years frozen

Nuts are 50 to 70% oil, mostly unsaturated, and unsaturated fat oxidises when it meets air, light and warmth. The result is the bitter, paint-like taste of a stale walnut, which is unpleasant rather than dangerous. Shelled nuts go first because the shell was doing the protecting; walnuts and pecans go fastest because their oil is the least stable. The freezer roughly triples the useful life and does not harm the texture.

## How to store it

- Airtight in the fridge or freezer if you keep them more than a couple of months.
- Buy in shell for long storage.

## How to tell it has gone

- Bitter, paint-like or fishy taste means rancid.
- Visible mould, especially on peanuts, means discard — that is a different problem from rancidity.
