Soy sauce is a brine, typically 14 to 18% salt, and at that concentration very little grows. An unopened bottle keeps for years, and the date on it is a quality marker. Once opened, oxidation darkens the sauce and the delicate aromatics fade, which happens faster at room temperature than in a fridge — many Japanese manufacturers now recommend refrigeration after opening for exactly this reason. It does not become unsafe; it becomes a duller, saltier version of itself.

## How to store it

- Refrigerate after opening if you care about flavour.
- Keep the cap on; evaporation concentrates the salt.

## How to tell it has gone

- Much darker colour and a flat, purely salty taste mean the aromatics have gone.
