Dried leafy herbs: 1-3 years A spice is dry, so nothing grows in it, and the date on the jar is entirely about flavour. What is lost is volatile oil, which evaporates and oxidises through the lid, faster once the spice is ground because grinding multiplies the surface area. That is why whole cumin or peppercorns keep their punch for years while ground cumin fades. Trust your nose rather than the label: crush a pinch, and if it smells of dust rather than the spice, it will do nothing for the dish. ## How to store it - Away from the hob — heat and steam are the fastest route to flat spices. - Dark cupboard, tightly closed, not a rack in sunlight. - Buy whole and grind as needed if you use a spice rarely. ## How to tell it has gone - Crush a pinch: no smell means no flavour.
