# Does Spirits (whisky, vodka, gin, rum) expire?

At 40% alcohol by volume nothing microbial survives, so a sealed bottle of spirit does not spoil and does not improve either — whisky ages in the cask, not in the bottle. An opened bottle is a different matter, because air in the headspace slowly oxidises the aromatic compounds, and a bottle left with an inch in the bottom for a year tastes noticeably duller. Cream liqueurs are the exception in the drinks cabinet: they contain dairy, they carry a real date, and they should be refrigerated after opening. Light and heat also degrade spirits, which is why a bottle on a sunny shelf fades in colour and flavour.

## How to store it

- Upright, so the spirit does not sit against the cork and rot it.
- Cool and out of direct sunlight.
- Decant into a smaller bottle if a lot has been drunk, to cut the air in the headspace.

## How to tell it has gone

- Flat, cardboard-like aromas mean oxidation. Cream liqueurs that have thickened or curdled are finished.
