**How many taste buds do you have?: about 2,000 to 8,000**

The "tongue map" showing sweet at the tip and bitter at the back is a mistranslation of a 1901 German paper and has been known to be wrong since the 1970s. All five tastes are detectable everywhere there are taste buds.

The commonly repeated "10,000 taste buds" is at the very top of the real range and is best treated as wrong. Counts in adults run from about 2,000 to 10,000, with an average nearer 4,000 to 5,000. The variation is not noise — it separates people into rough groups that experience food differently, with the densest-papillae quarter of the population perceiving bitterness far more strongly. Taste buds are not only on the tongue: they also occur on the soft palate, the epiglottis and the upper oesophagus.

## How the figure is arrived at

Stain and count. Blue food dye is applied to the tongue tip; fungiform papillae do not take up the dye and stand out as pink circles. Count them in a punched 6 mm circle and scale by tongue area, then multiply by the several taste buds each papilla carries. Densities differ fivefold between individuals, which is where most of the range comes from.
