There is no plant version.** Gelatin melts at about 35 °C, just below body temperature, which no plant gum does — and that single property is why nothing substitutes cleanly. Agar and carrageenan set firmer and stay solid in the mouth; pectin sets only with acid and sugar. Fresh pineapple, kiwi, papaya, figs and ginger contain proteases that cut the collagen chains, so a jelly made with them never sets, though tinned fruit is fine because canning heat destroys the enzymes. Gelatin also appears well outside food: in capsule shells, in photographic film emulsion, and as a clarifier for wine and beer, which is why some drinks are not vegetarian. ## Component by component *Every material is a choice, and the third column is the constraint that drove it.* | Part | Material | Why that material | | --- | --- | --- | | raw material | pig skin, cattle hide and demineralised cattle bone | These are the cheapest concentrated sources of type I collagen, and are by-products of meat production rather than a separate industry. | | process | acid pre-treatment (type A) or lime pre-treatment (type B), then hot water extraction | Acid suits soft pig skin and gives a gel that sets at a lower pH; lime suits tougher hide and bone and takes weeks. | | gelling behaviour | triple-helix collagen fragments that re-associate on cooling | The helices re-form as the solution cools and hold water in a network — a physical set, so it can be melted and re-set repeatedly. | | grade | bloom strength, roughly 50 to 300 | Bloom measures gel firmness; a recipe written for 200-bloom leaf gelatin fails with an unspecified powder of a different strength. | ## Other food and drink objects - [Marshmallow](https://atoneplace.net/made-of/marshmallow/) — Sugar syrup whipped full of air and held there by gelatin, which comes from animal collagen. - [Chewing gum](https://atoneplace.net/made-of/chewing-gum/) — A base of synthetic rubber, wax and resin that you never swallow, carrying sweetener and flavour that you do. - [Chocolate](https://atoneplace.net/made-of/chocolate/) — Ground cocoa solids and cocoa butter with sugar, plus a trace of lecithin — the fat does the rest. - [Cheese](https://atoneplace.net/made-of/cheese/) — Milk protein clotted by an enzyme, drained of whey and salted — four ingredients and a lot of time. - [Bread](https://atoneplace.net/made-of/bread/) — Flour, water, yeast and salt — plus, in most factory loaves, enzymes, emulsifiers and a mould inhibitor. - [Potato chips (crisps)](https://atoneplace.net/made-of/potato-chips/) — Thin potato slices fried in vegetable oil, seasoned with a maltodextrin-carried flavour powder, packed in nitrogen. - [Tofu](https://atoneplace.net/made-of/tofu/) — Soy milk curdled with a mineral salt and pressed — cheese-making, with soybeans instead of milk. ## Common questions ### What is a Gelatin made of? Collagen from animal skin and bone, broken down with acid or alkali and dried. There is no plant version. ### What is the raw material of a Gelatin made of? Pig skin, cattle hide and demineralised cattle bone. These are the cheapest concentrated sources of type I collagen, and are by-products of meat production rather than a separate industry. ### What is the process of a Gelatin made of? Acid pre-treatment (type A) or lime pre-treatment (type B), then hot water extraction. Acid suits soft pig skin and gives a gel that sets at a lower pH; lime suits tougher hide and bone and takes weeks. ## Related pages - [Marshmallow](https://atoneplace.net/made-of/marshmallow/) - [Chewing gum](https://atoneplace.net/made-of/chewing-gum/) - [Chocolate](https://atoneplace.net/made-of/chocolate/) - [Cheese](https://atoneplace.net/made-of/cheese/) - [Bread](https://atoneplace.net/made-of/bread/) - [Potato chips (crisps)](https://atoneplace.net/made-of/potato-chips/) - [Tofu](https://atoneplace.net/made-of/tofu/) - [Pencil](https://atoneplace.net/made-of/pencil/) - [Tennis ball](https://atoneplace.net/made-of/tennis-ball/) - [Banknote](https://atoneplace.net/made-of/banknote/) - [Golf ball](https://atoneplace.net/made-of/golf-ball/) - [Paper](https://atoneplace.net/made-of/paper/) - [Glass](https://atoneplace.net/made-of/glass/) ## Sources - Official vendor product documentation — At One Place (/about/)
