Stopping entirely allows all of that to build up, which mats the hair and gives the yeast Malassezia — a normal resident of the scalp that feeds on sebum — a richer environment, which is associated with dandruff and seborrhoeic dermatitis. The popular claim that hair "adjusts" and produces less oil after a few weeks without washing is not well supported: sebum production is hormonally regulated and does not respond to shampoo frequency. What does change is perception, because hair that is already coated no longer looks freshly greasy. Left indefinitely, the hair can mat into a solid mass that has to be cut out, which is the endpoint of the experiment rather than a stable state.
