A jab lands in about a tenth of a second, which is comfortably inside a human visual reaction time. You cannot see a jab coming and then move; the defence has to start before the punch does. Boxers slip punches by reading stance, weight shift and shoulder position, and the ones who look like they have superhuman reflexes are almost always reading the tell rather than the punch.
