An air fryer is a small convection oven, so halloumi cooks at 190 °C rather than 200 °C and takes 6–9 min instead of 15–20. That is roughly the usual 20 °C drop and a fifth off the time, though this one needs more of a drop than the rule suggests — see below.

What goes wrong

  • Cut at least 1 cm thick. Thin slices dry to rubber before they colour.
  • Pat dry first — halloumi is stored in brine and the surface water has to go before browning begins.
