What goes wrong

  • Prick the skin. Steam has to escape, and a sealed potato can burst.
  • Rub with oil and salt for crisp skin; wrap in nothing. Foil steams it.
  • Done when a skewer meets no resistance at the centre, around 30-40 minutes for a medium potato.
