Mixed vegetables in an air fryer

mixed vegetables in an air fryer
190 °C / 374 °F for 12–18 min
Oven equivalent: 200 °C / 392 °F for 25–35 min

An air fryer is a small convection oven, so mixed vegetables cooks at 190 °C rather than 200 °C and takes 12–18 min instead of 25–35. That is roughly the usual 20 °C drop and a fifth off the time, though this one needs more of a drop than the rule suggests — see below.

What goes wrong

  • Cut everything to a similar size or add the dense vegetables first — carrot and potato need roughly twice as long as courgette or pepper.
  • A light coat of oil is what carries the heat to the surface. Completely dry vegetables dehydrate rather than roast.

Air fryer wattage and basket size vary widely, so treat the first batch as a calibration run and write down what worked. These figures are compiled guidance, not a published standard.
