What goes wrong
- Measure the basket first. Anything over about 1.8 kg will touch the element and scorch before the middle is done.
- Check the thickest part of the thigh, not the breast — the thigh is the last part to reach temperature.
- Rest for 10 minutes before carving. The temperature climbs a few more degrees off the heat.
