What actually happens
Castile soap is made by treating oil with a base, and adding acid reverses part of that — the soap "un-saponifies" back towards free fatty acids, which appear as white curds. The mixture no longer emulsifies, so it does not clean, and it leaves a greasy film that has to be washed off with something else.
What to do instead
Use the soap to clean and rinse, then the vinegar separately for limescale or glass.
