Does Dried yeast expire?
Dried yeast is dormant living organisms, and a fraction of the population dies every month, faster in warmth and faster still once the packet is open and humidity gets in. Past a certain point the dough simply will not rise, or rises so slowly that it goes sour first. Proofing settles it in ten minutes: a teaspoon of yeast in warm water with a pinch of sugar should be visibly foaming. Instant and fast-action yeast can be added straight to flour but ages the same way, and freezing an opened packet extends it considerably.

- Refrigerate or freeze once opened, in an airtight jar.
- Keep it away from the hob and the kettle.
How to tell it has gone
- No foam after 10 minutes in warm sugared water at blood heat means it is dead.
