Baking powder is an acid and a base packed together with a starch buffer, and it works because the two react when moisture and heat arrive. Ambient humidity starts that reaction slowly inside the tin, so an old tin has already spent some of its gas before it reaches the bowl. Nothing about that is dangerous — the failure mode is a flat cake, not an upset stomach. Test it by dropping half a teaspoon into hot water: vigorous fizzing means it is fine, a lazy sputter means replace it.

- Airtight, dry, and not next to the kettle or the hob — steam is what kills it.
How to tell it has gone
- Half a teaspoon in hot water should fizz hard. A weak reaction means it is spent.
