Roasting fills the bean with carbon dioxide, which escapes over the following weeks and carries the aromatics with it. A bag two months past roasting brews something perfectly safe and noticeably duller — less crema, less aroma, a flatter cup. Oxygen is the other enemy, which is why one-way valve bags exist and why an airtight container matters more than a cupboard temperature. Freezing whole beans in a sealed bag genuinely works for long storage, as long as they are not repeatedly thawed and refrozen.
How to store it
- Airtight and opaque at room temperature for daily use.
- Freeze in sealed portions for long storage; take out what you need and do not refreeze.
- Do not keep beans in the fridge — they absorb odours and condense moisture.
How to tell it has gone
- No aroma when the bag is opened, and no bloom when hot water hits the grounds, means the CO2 has gone.
"Use by" and "best before" are legally different. Use-by is a safety date and should be respected; best-before is about quality, and food is usually fine well past it. Where the two diverge matters, the page above says which applies.
