Whole beans protect their own aromatics; grinding exposes all of it at once, which is why ground coffee loses in a week what beans lose in a month. A vacuum-sealed pack keeps until it is opened, and then the same clock starts. None of this is a safety question — old coffee is stale, not harmful. If you have a grinder, buying beans is the single change that makes the largest difference.
How to store it
- Airtight, opaque, room temperature.
- Freeze in small sealed portions if you must keep it a long time.
How to tell it has gone
- A cardboard or flat taste, and no bloom when brewing.
