Does Nuts expire?
They go rancid rather than mouldy, usually within a year, and rancid is a taste problem rather than a poisoning one.

Nuts are 50 to 70% oil, mostly unsaturated, and unsaturated fat oxidises when it meets air, light and warmth. The result is the bitter, paint-like taste of a stale walnut, which is unpleasant rather than dangerous. Shelled nuts go first because the shell was doing the protecting; walnuts and pecans go fastest because their oil is the least stable. The freezer roughly triples the useful life and does not harm the texture.

How to store it

  • Airtight in the fridge or freezer if you keep them more than a couple of months.
  • Buy in shell for long storage.

How to tell it has gone

  • Bitter, paint-like or fishy taste means rancid.
  • Visible mould, especially on peanuts, means discard — that is a different problem from rancidity.

"Use by" and "best before" are legally different. Use-by is a safety date and should be respected; best-before is about quality, and food is usually fine well past it. Where the two diverge matters, the page above says which applies.
