By US standard of identity, pure vanilla extract must contain at least 35% alcohol by volume, which is well above the concentration at which spoilage organisms can survive. It darkens and its flavour rounds out with time, and many bakers consider a five-year-old bottle better than a fresh one. Imitation vanilla is a vanillin solution in a weaker carrier and does fade over a couple of years. Neither becomes unsafe; the difference is only how much flavour is left.

- Cool, dark, tightly capped — the alcohol evaporates if the cap is loose.
How to tell it has gone
- A weak, flat smell in imitation vanilla means the vanillin has gone. Pure extract simply darkens.
