What is a Chocolate made of?
Ground cocoa solids and cocoa butter with sugar, plus a trace of lecithin — the fat does the rest.

Cocoa butter can crystallise into six different forms, and only one of them — form V — is glossy, snaps cleanly and melts at the right temperature. Tempering is the process of forcing that form to dominate by heating, cooling and reheating through a precise sequence, typically to about 45 °C, down to 27 °C and back to 31 °C for dark chocolate. Untempered chocolate sets soft and dull and blooms grey as fat migrates to the surface, which is also what happens when a bar is left in a warm car and then re-hardens. Bloom is harmless; it is the same chocolate with the crystals in the wrong form.
