Scald injury is a function of temperature and time, and the two trade off steeply. Water at 49 °C takes several minutes to cause a full-thickness burn, at 60 °C about five seconds, and above about 70 °C roughly one second. At 100 °C the injury is immediate and complete through the skin. What then determines survival is not the burn itself but the area: burns covering a large percentage of the body cause massive fluid loss into damaged tissue, and mortality rises sharply with the area and the age of the person. This is also the reason domestic hot water systems are commonly limited to around 49-50 °C at the tap, since that single change converts an instant injury into one with several minutes of margin.
